Beef briani
For 6 persons:
- 1 kilo of rumpsteak
- 300g basmati rice
- 250g of potatoes
- 1 yogurt
- 2 onions
- 4 cloves of garlic
- 2 cinnamon sticks
- 30g of ginger
- 7 whole cloves
- 10 cardamoms
- 2 teaspoons small-flowered anise
- 1 bunch of mint and coriander
- 1 tablespoon of saffron strands
- 1 liter of oil
Cut the beef in small pieces.
Heat oil in a pan and brown the sliced onions.
Degrease the pan and bring to boil 1 cinnamon stick, 5 cardamoms, 5 whole cloves and crush them.
Mix the pieces of beef with yogurt, crushed spices, garlic, ginger and crushed small anise, mint and coriander, finely sliced in a large bowl.
Salt and let marinate for 2 hours.
Sauté the mix for 10 minutes, adding some water.
Soak the saffron strands in 3 tablespoons of boiling water.
Wash the rice, let cook with the other cinnamon stick and the rest of cardamoms, cloves and small anise.
Salt, when half cooked, remove from heat and drain.
Place half the rice, the beef and the diced potatoes in a large pot and sprinkle with a glass of water and add the remaining rice.
Sprinkle with saffron and cook over medium heat for 35-45 minutes.
